- 2 tsp. sugar
- 2 tsp. flour
- 3/4 c. milk
- 1 egg, slightly beaten
- 2 sq. (2 oz.) sweet baking chocolate
- 2 Tbsp. white creme de menthe
- 6 egg whites, stiffly beaten
- butter
- granulated sugar
Directions

1Combine 2 teaspoons sugar and flour in saucepan.

2Gradually stir in milk, mixing well.

3Stir in egg and egg yolk and cook over low heat until thickened, stirring constantly.

4Cool.

5Melt chocolate in creme de menthe.

6Stir into egg mixture.

7Fold in stiffly beaten egg whites.

8Spoon into 4 (8 ounce) souffle cups which have been lightly buttered and sprinkled with granulated sugar.

9Bake in a pan of hot water at 350° for 20 minutes or until souffle tests done (a silver knife inserted in center comes out clean when done).

10Serve at once.
