Chocolate Mousse

- 8 eggs
- 2 pkg. (12 oz.) semi-sweet chocolate
- 10 Tbsp. butter
- 1/4 c. cognac or brandy
- 3/4 c. heavy cream
- 1 1/2 tsp. vanilla extract
Directions

1Separate eggs and put whites in a large bowl.

2Melt chocolate and butter in double boiler.

3Beat in yolks, one at a time, and let cool.

4Stir in brandy.

5Beat egg whites and fold into chocolate mixture.

6Chill in fridge for 24 hours.

7When ready to serve, beat heavy cream until stiff and add 1 1/2 teaspoons vanilla.

8Put on top of chocolate mousse and serve.
