- 1 cup sugar
- 1/4 cup cornstarch
- Pinch salt
- 8 ounces fine-quality bittersweet chocolate (not unsweetened)
- 2 2/3 cups whole milk
- 2 large egg yolks
- 2 tablespoons unsalted butter
- 1/2 teaspoon vanilla
Directions

1In a heavy saucepan whisk together sugar, cornstarch, and a pinch salt.

2Chop chocolate and add to sugar mixture.

3In a bowl whisk together milk and egg yolk and gradually whisk into chocolate mixture.

4Bring mixture just to a boil over moderate heat, whisking constantly, and boil 1 minute, whisking.

5Remove pan from heat and whisk in butter and vanilla.

6Divide pudding between 4 (8-ounce) ramekins.

7Chill puddings in freezer, surfaces covered with plastic wrap, until cooled, about 30 minutes.
