- 16 oz. semi-sweet chocolate
- 16 Tbsp. unsalted butter, softened
- 6 egg yolks
- 5 Tbsp. dark rum
- 3/4 c. confectioners sugar
- 3/4 c. Dutch cocoa
Directions

1In double boiler, melt chocolate over simmering water.

2Beat in softened butter, egg yolks, rum and vanilla with wire whisk. Remove from heat and refrigerate until firm enough to handle (1 hour), keeping tightly covered.

3Combine cocoa and confectioners sugar.

4Shape chocolate mixture into 1-inch balls and roll in cream and sugar.

5Store in airtight container and refrigerate.
