  • eggplant
  • 1 onion
  • 1 large segment garlic
  • 1 Tbsp. olive oil
  • lemon juice and salt to taste

Directions

    Microwave eggplant, one at a time, for 15 minutes.

    If not completely soft, add a few minutes.

    Poke them first to let steam escape.

    When cool, scrape flesh from skin and chop well.

    (This can be done in a 350° oven, but microwave retains lovely celadon green color!)
