- 1 1/2 cup gluten-free biscuit mix
- 1/2 cup Yellow cornmeal
- 1 cup water
- 6 oz chorizo
- 8 oz Tomato sauce
- 1/4 tsp salt
- 1 dash pepper
- 6 oz shredded Mozzarella
Directions

1Mix biscuit mix, cornmeal, & water together until soft dough forms.

2Press into greased pie plate, bringing dough up the sides.

3Preheat oven to 425F.

4Cook chorizo in skillet until sausage is firm, about 10 minutes.

5Drain.

6Return to skillet.

7Add tomato sauce, salt, & pepper.

8Heat to boiling.

9Reduce heat.

10Simmer uncovered until slightly thickened, 5-7 minutes.

11Spread in crust.

12Sprinkle with cheese.

13Bake until crust is golden brown, 15-18 minutes.

14Let set 5 minutes, then serve.

15Notes: if you use regular biscuit mix, use half the amount of water.

16Note: if you choose you could add onions & Green chilies when you start cooking the meat.

17You could also top the whole pizza with olives before putting in oven.
