  • 3 1/4 tablespoons whole milk

Directions

    Preheat oven to 200 degrees Celsius.

    In a saucepan boil the water with the milk, a pinch of salt, a pinch of granulated sugar, and the butter.

    Add the flour all at once.

    Stir until the mixture comes away from the sides of the pan.

    Transfer the dough into the mixer bowl and let cool.

    Add the eggs one by one, stirring quickly between each to obtain a homogeneous dough.

    Use a pastry bag to pipe out the choux pastry on a baking sheet covered with parchment paper. Sprinkle with coarse sugar.
