- 2 gal. green tomatoes
- 8 large onions, chopped
- 10 bell peppers, chopped
- 3 Tbsp. salt
- 6 hot peppers, chopped
- 1 3/4 c. sugar
- 1 qt. vinegar
- 1 Tbsp. cinnamon
- 1 Tbsp. allspice
- 1/4 tsp. cloves
- 3 Tbsp. dry mustard
- few bay leaves
Directions

1Chop the tomatoes.

2Mix tomatoes, onions and bell peppers and cover with salt.

3Let stand overnight.

4Drain.

5Add hot peppers, sugar, vinegar and spices tied in cloth bag.

6Boil until tender, about 15 minutes.

7Remove spice bag. Pack tightly into clean hot pint jars. Adjust lids.

8Process in boiling water bath for 5 minutes.

9Yields 8 to 9 pints.
