Ingredients

  • 2 gal. green tomatoes
  • 8 large onions, chopped
  • 10 bell peppers, chopped
  • 3 Tbsp. salt
  • 6 hot peppers, chopped
  • 1 3/4 c. sugar
  • 1 qt. vinegar
  • 1 Tbsp. cinnamon
  • 1 Tbsp. allspice
  • 1/4 tsp. cloves
  • 3 Tbsp. dry mustard
  • few bay leaves

    Chop the tomatoes.

    Mix tomatoes, onions and bell peppers and cover with salt.

    Let stand overnight.

    Drain.

    Add hot peppers, sugar, vinegar and spices tied in cloth bag.

    Boil until tender, about 15 minutes.

    Remove spice bag. Pack tightly into clean hot pint jars. Adjust lids.

    Process in boiling water bath for 5 minutes.

    Yields 8 to 9 pints.
