Ingredients

  • 1 gal. cabbage
  • 1 gal. green tomatoes
  • 1 doz. onions
  • 1/2 doz. sweet bell peppers
  • 1/2 doz. bell peppers (red)
  • 1 gal. vinegar
  • 2 lb. sugar
  • 1/2 c. ground mustard
  • 6 Tbsp. white mustard seed
  • 3 Tbsp. celery seed
  • 1 Tbsp. cloves, tied in bag

    Chop vegetables; mix well.

    Put a layer of vegetables in an enameled pan or stone jar and sprinkle with salt.

    Repeat until all vegetables are used.

    Cover the last layer with salt.

    Let stand overnight.

    Drain well.

    In separate vessel, put vinegar, sugar, ground mustard, mustard seed, celery seed and cloves.

    Heat to boiling; add the well drained vegetables and cook slowly until tender (about 30 minutes).

    Pack in jars.

    Process in boiling water bath canner for 10 minutes.
