Ingredients

  • 1 lb. butter
  • 2 1/2 c. sugar
  • 3 fluid oz. pure lemon extract
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 6 eggs, separated
  • 3 1/2 c. flour plus 1/2 c. for raisins
  • 1 lb. pecans
  • 1 box raisins
  • 1 box white raisins

Directions

    Bake at 300° for 1 1/2 hours to 2 hours.

    Line angel food pan with brown paper.

    Beat egg whites until stiff; set aside.

    Cream butter and sugar, add soda, salt, half of sifted flour with lemon extract; beat until smooth.

    Finish adding flour, mixing well. Take 1/2 cup flour and mix with raisins.

    Fold pecans and raisins into mixture, then fold egg whites into mixture.

    Pour into lined pan and bake.
