- 1 lb. butter
- 2 1/2 c. sugar
- 3 fluid oz. pure lemon extract
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 6 eggs, separated
- 3 1/2 c. flour plus 1/2 c. for raisins
- 1 lb. pecans
- 1 box raisins
- 1 box white raisins
Directions

1Bake at 300° for 1 1/2 hours to 2 hours.

2Line angel food pan with brown paper.

3Beat egg whites until stiff; set aside.

4Cream butter and sugar, add soda, salt, half of sifted flour with lemon extract; beat until smooth.

5Finish adding flour, mixing well. Take 1/2 cup flour and mix with raisins.

6Fold pecans and raisins into mixture, then fold egg whites into mixture.

7Pour into lined pan and bake.
