  • 5 to 6 lb. lamb roast
  • salt
  • pepper
  • 1 jar black currant jelly
  • 1 c. ketchup

Directions

    Place meat on rack in open baking pan; salt and pepper. Insert meat thermometer and roast at 325° until meat reaches a temperature of 175° for medium, 180° for well-done.

    After one hour, baste with sauce made with jelly and ketchup.

    Baste every half hour.

    Total Cooking Time: 3 to 3 1/2 hours.
