Chunky Cheese Muffins

  • 80 grams Processed cheese
  • 60 grams Mayonnaise
  • 60 grams Sugar
  • 1 Egg
  • 150 grams Plain yoghurt
  • 150 grams Cake flour
  • 1 1/2 tsp Baking powder

Directions

    Dice the cheese to 1 cm pieces.

    Put the mayonnaise and sugar into a bowl and mix well with a whisk.

    Mix in the egg, then add the yoghurt and mix some more.

    Sift the flour and baking powder into Step 2.

    Mix in the cheese (keep some aside for decorating), and use a rubber spatula to mix in a cutting motion.

    Line the mould with muffin cups and pour in the batter.

    Top with the leftover cheese.

    Bake for 25-30 minutes in an oven preheated to 180 degrees C, and they're done.

    Adjust the baking time according to your oven.
