- 4 lb. hard green peaches (pears could be used)
- 2 Tbsp. white mustard seed
- 1 Tbsp. ground chile pepper
- 1 lb. preserved ginger (in syrup)
- 2 lb. sugar
- 2 qt. vinegar
- 1 1/2 c. raisins
- 1 clove garlic
Directions

1Peel and cut fruit; add 1-quart vinegar.

2Boil for 20 minutes. Combine sugar and second quart of vinegar; boil until it is a thick syrup.

3Pour off most of the liquid from the fruit and add to the syrup.

4Boil this until it is thick.

5Combine this thick syrup with the rest of the ingredients and fruit, except the ginger; cook 30 minutes.

6Add chopped ginger and its syrup and cook 10 minutes longer.

7Bottle the chutney.

8Flavor improved if placed in sun for several days.

9Yields 4 to 5 pints.
