  • 3 Tbsp. flour
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 lb. beef stew meat, cut into pieces
  • 2 Tbsp. oil
  • 1 c. apple cider
  • 1/2 c. water
  • 1 Tbsp. vinegar
  • 1/2 tsp. thyme
  • 2 large carrots, cut into pieces
  • 1 large potato, peeled and cut up
  • 1 medium onion, sliced
  • 1 celery rib, cut into pieces

Directions

    In bowl, combine flour, salt and pepper; add beef and toss to coat.

    In large pan, brown beef in oil.

    Add cider, water, vinegar and thyme; bring to a boil.

    Reduce heat; cover and simmer for 1 hour and 45 minutes or until meat is tender.

    Add carrots, celery, potato and onion; return to a boil.

    Reduce heat; cover and simmer 45 minutes or until vegetables are tender.
