  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1 cup canned unsweetened apple slices or canned pears in fruit juice, drained, cut into 1/2-inch pieces
  • 3/4 cup firmly packed light brown sugar
  • 1/2 cup cranberry applesauce or unsweetened applesauce
  • 1/2 cup egg substitute
  • 1/4 cup sugar
  • 2 tablespoons canola or corn oil
  • 1 teaspoon vanilla extract

    Preheat the oven to 350F.

    Lightly spray a 13 x 9 x 2-inch metal baking pan with cooking spray.

    In a medium bowl, stir together the flour, baking powder, cinnamon, and baking soda.

    In another medium bowl, stir together the remaining ingredients.

    Add the flour mixture, stirring until just moistened.

    Bake for 20 minutes, or until a knife inserted in the center comes out clean.
