  • 15 large cucumbers (peel, core and cut in 1/2-inch thick long fingers)
  • 2 c. lime
  • 1 c. vinegar
  • 1 1/2 oz. red food coloring
  • 3 c. vinegar
  • 11 c. sugar
  • 1 (9 oz.) pkg. red hots
  • 8 1/2 c. water
  • 2 Tbsp. alum
  • water to cover
  • 3 c. water
  • 8 cinnamon sticks

    Add lime to 8 1/2 cups water.

    Add cucumbers and soak 24 hours.

    Rinse 3 times to remove lime and leave in ice water for 3 hours.

    Drain.

    Combine 1 cup vinegar, alum and food coloring. Add cucumbers and cover with water.

    Simmer 1 hour.

    While mixture is simmering, mix 3 cups vinegar, 3 cups water, 11 cups sugar, cinnamon sticks and red hots.

    Boil until melted.

    Pour over drained cucumbers and let stand 12 hours.

    Heat to boiling.

    Pack in jars and seal.
