- 8 oz. pitted dates
- 3/4 c. plus 3 Tbsp. sugar
- 3/4 tsp. vanilla
- 1 3/4 c. flour
- 3/4 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 lb. butter (room temperature)
- 1 egg
- 1 1/2 tsp. milk
Directions

1Combine dates, 2 tablespoons sugar and 1/2 cup water in saucepan.

2Simmer until dates are soft, about 3 minutes.

3Stir in 1/4 teaspoon vanilla.

4Combine flour, baking powder, salt and cinnamon.

5Beat 3/4 cup sugar into butter, then egg, 1/2 teaspoon vanilla and finally the flour mixture.

6Wrap and chill.

7Between 2 sheets of wax paper, roll out half the dough to a 9-inch square and put into a buttered 9-inch pan.

8Spread with dates.

9Roll out remaining dough and put on top.

10Press edges with fork and vent. Brush with milk and sprinkle with 1 tablespoon sugar.

11Bake at 350° for 40 minutes or until golden.

12Cool; cut into bars.
