Ingredients
- 1 1/2 to 2 lb. linguine
- 1/4 lb. Prosciutto, chopped
- 3 Tbsp. peas
- 6 c. whipping cream
- 3/4 c. beef stock
- 3/4 c. chicken stock
- 1 medium size onion, chopped
- 5 cloves garlic, diced
- 4 Tbsp. parsley, chopped
- 6 medium tomatoes, seeded and chopped
- 3 Tbsp. oil
- 5 Tbsp. butter
- 1/3 to 1/2 c. Parmesan cheese
Directions

1In large skillet or saucepan, heat oil and butter.

2Add onion and garlic.

3Allow to melt and turn translucent.

4Add the Prosciutto; saute gently 2 minutes.

5Add chopped tomatoes and cook 5 minutes or until oil separates from vegetables.

6Add beef and chicken stock, chopped parsley and peas.

7Cook 2 minutes.

8Add whipping cream.

9Cook another 5 minutes.

10Thicken with 2 tablespoons flour mixed with water to form a paste.

11Serve over linguine.

12Add 1/3 to 1/2 cup Parmesan cheese while mixing.
