  • 2 tablespoons lime juice
  • 1 1/2 tablespoons all-fruit orange marmalade
  • 4 mild fish fillets, such as sole (about 4 ounces each), rinsed and patted dry

    Preheat the oven to 375F.

    Lightly spray a 12 x 8 x 2-inch baking pan with cooking spray.

    In a small bowl, stir together the lemon and lime juices and orange marmalade.

    Using a basting brush, coat both sides of the fish with the mixture.

    Transfer the fish to the pan.

    Bake for 18 to 20 minutes, or until the fish flakes easily when tested with a fork.
