- 2 tbsp butter
- 1/4 cup granulated sugar, plus additional, for sprinkling
- 1 None lemon, peel finely grated
- 1 None lime, peel finely grated
- 2 tbsp flour
- 1 tbsp lemon or lime juice
- 1 cup milk
- 2 None eggs, separated
- 2 None egg whites
- None None Powdered sugar, for dusting
Directions

1Preheat the oven to 375°F. Lightly grease four 3/4-cup souffle dishes. Sprinkle each with a little granulated sugar. Place on a baking pan.

2Beat butter, granulated sugar and citrus peels in large bowl with an electric mixer until creamy. Stir in flour and juice.

3Bring milk to a boil in a medium saucepan. Whisk into butter mixture. Stir on low heat until the mixture boils and thickens. Whisk in egg yolks and cool slightly.

4Beat egg whites in a clean bowl with electric mixer until soft peaks form. Fold lightly into citrus mixture. Spoon into souffle dishes.

5Bake for 15-20 mins, or until puffed and golden. Dust with powdered sugar and serve immediately.
