- 2 cans minced clams
- 2 c. or 2 bottles clam juice
- 1/4 c. diet margarine
- 1 large onion, chopped
- 1 1/2 c. cubed potatoes
- 1 c. celery, chopped
- 3/4 c. carrots, chopped
- 1 Tbsp. parsley (fresh or dry)
- 1/4 c. green pepper, chopped
- 34 oz. can tomatoes or 1 qt.
- 1 1/2 tsp. thyme
- 1/8 tsp. curry powder
- extra water to cover vegetables
Directions

1Cook all vegetables and juice for 30 minutes or until vegetables are done.

2Add clams last 2 minutes of cooking.

3May add salt and pepper to taste.
