Ingredients

  • 2 cans minced clams
  • 2 c. or 2 bottles clam juice
  • 1/4 c. diet margarine
  • 1 large onion, chopped
  • 1 1/2 c. cubed potatoes
  • 1 c. celery, chopped
  • 3/4 c. carrots, chopped
  • 1 Tbsp. parsley (fresh or dry)
  • 1/4 c. green pepper, chopped
  • 34 oz. can tomatoes or 1 qt.
  • 1 1/2 tsp. thyme
  • 1/8 tsp. curry powder
  • extra water to cover vegetables

Directions

    Cook all vegetables and juice for 30 minutes or until vegetables are done.

    Add clams last 2 minutes of cooking.

    May add salt and pepper to taste.
