Clam Chowder

Ingredients

  • 2 medium spuds, diced
  • 2 c. finely chopped celery
  • 3 cans minced clams
  • 1 large green pepper, diced
  • 1 medium onion, diced
  • 1/2 lb. bacon
  • 1 qt. milk

Directions

    Cook celery, onion and spuds well done in just enough water to keep from sticking.

    Add clam juice and simmer 5 minutes.

    Fry bacon until well done, but add pepper before bacon is done so flavor will blend.

    Add clams and simmer about 10 minutes.

    Add enough flour to thicken and simmer 10 minutes.

    Put all together. Add milk and let come to a slow boil.

    Season to taste.

    Stir vegetables frequently to avoid sticking.
