Clam Chowder

Ingredients

  • 1/2 to 1 bunch chopped green onions
  • 3 celery stalks, sliced
  • 3 medium potatoes, cubed
  • 1 1/2 to 2 c. chicken broth
  • 1/4 lb. butter
  • 1/2 c. flour
  • 3 c. milk or to desired thickness
  • 1 can cream of mushroom soup
  • 2 to 3 cans chopped or minced clams (do not drain)
  • salt to taste
  • pepper to taste
  • 1 to 2 carrots, chopped (if desired)

Directions

    Place green onions (chopped), celery, carrots and potatoes in chicken broth and simmer.

    While this is simmering, make white sauce with butter and flour.

    Melt butter, then stir in flour; blend until smooth.

    Gradually add milk (if too thick, add more milk).

    After this thickens, add cream of mushroom soup.

    Blend together.

    After the vegetable mixture is tender, add white sauce to vegetables.

    Add clams and enjoy!
