  • 25 medium clams, shucked, drained and chopped fine
  • 2 medium onions, chopped finely
  • 1 egg, lightly beaten
  • 2 c. pancake flour
  • 1/4 tsp. seasoning salt
  • 1/4 tsp. pepper
  • vegetable oil

Directions

    Combine pancake mix, salt and pepper; set aside.

    In another bowl beat egg and add onions.

    Mix well.

    Stir mixture into dry ingredients.

    Add clams.

    Stir until smooth.

    Drop clam mixture into large cast-iron skillet with hot oil. Fry until golden brown.
