Classic Chicken Risotto

Ingredients
- 2 Tbsp. butter
- 1 Tbsp. olive oil
- 1 medium onion, finely chopped
- 2 c. raw chicken, cubed
- 1 1/2 c. Carolina rice
- 2 tsp. Italian seasoning
- 2 1/2 c. water
- 1 bay leaf
- 2 Herb-Ox chicken flavor bouillon cubes
- 4 Tbsp. freshly grated Parmesan cheese
- 1 Tbsp. finely chopped parsley
Directions

1Heat butter and oil in a large saucepan.

2Saute the onion and chicken for 3 minutes.

3Add rice and Italian seasoning; cook for 2 minutes.

4Add Herb-Ox bouillon cubes, water and bay leaf.

5Bring to a boil.

6Stir once and lower heat to simmer.

7Cover and cook for 18 minutes, until rice is creamy and liquid is absorbed.

8Remove bay leaf.

9Yield: 4 servings.
