- sugar
- 1/2 c. whole milk
- 1 1/4 c. sugar
- 7 oz. unsweetened chocolate, chopped
- 6 large egg whites
- 4 large egg yolks
- powdered sugar
Directions

1Preheat oven to 350°.

2Butter 8 (2/3 cup) souffle dishes. Sprinkle with sugar.

3Tap off excess.

4Bring milk and 1 cup of sugar to simmer in large saucepan, stirring until sugar dissolves. Reduce heat to low.

5Add chocolate and stir until smooth.

6Pour into large bowl.

7Cool 10 minutes.

8Beat whites into soft peaks. Add remaining 1/4 cup sugar and beat until stiff.

9Whisk 1/4 whites and yolks into chocolate mixture.

10Fold in remaining whites.

11Bake until souffle puffs about 16 minutes.
