Classic Saffron Rice

- 1 cup long grain white rice
- 2 cup water or chicken stock
- 1 tbsp butter
- 1/2 tsp salt
- 1 tbsp finely minced onion (optional)
- 1 small pinch saffron, crumbled
Directions

1Place butter and minced onion in a heavy quart saucepan.

2Saute over medium heat until onion is translucent.

3Add rice, saffron, salt and water or stock.

4Bring to a rolling boil.

5Cover, reduce heat to simmer, cook until rice is tender and liquid is absorbed (about 18 minutes).
