Ingredients
- 1 1/3 c. cake flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 5 eggs
- 1/2 c. ice water
- 1/2 tsp. almond extract
- 3/4 tsp. cream of tartar
Directions

1Sift together flour, baking powder and salt.

2Set aside.

3In large mixer bowl, beat egg yolks at high speed until thick and lemon colored.

4Gradually beat in water until pale and foamy. Gradually beat in sugar until completely dissolved, 8 to 10 minutes.

5Add extract.

6Fold flour mixture in three additions into yolk mixture.

7Set aside.

8In small mixer bowl with clean beaters, beat egg whites with cream of tartar until stiff.

9Gently fold into batter.

10Turn into ungreased 10-inch tube pan and bake at 325° for 1 hour.

11Invert pan to cool.

12Use knife to loosen. Invert on plate.
