Cocoa Apple Cake

  • 3 eggs
  • 2 c. granulated sugar
  • 2 sticks margarine
  • 1/2 c. water
  • 2 1/2 c. all-purpose flour
  • 2 Tbsp. cocoa
  • 1 tsp. each: baking soda, cinnamon and allspice
  • 1 c. chopped walnuts
  • 1/2 c. semi-sweet chocolate bits
  • 2 c. grated apple
  • 1 Tbsp. vanilla
  • 2 c. milk
  • 4 egg yolks
  • 1/2 c. sugar
  • 1 Tbsp. cornstarch
  • dash of salt
  • 1 Tbsp. unflavored gelatin, dissolved in 1/4 c. cold water
  • 4 egg whites, well beaten
  • 1/2 c. sugar
  • 1 c. chopped Macadamia nuts
  • 1 Tbsp. rum flavoring
  • 1/2 pt. whipping cream with sugar to taste
  • 1 baked pie shell

Directions

    Scald milk.

    Beat egg yolks and add milk slowly.

    Add sugar, cornstarch and salt.

    Cook over hot water in a double boiler until mixture coats a spoon.

    Add dissolved gelatin to hot custard mixture.

    Chill until thick.

    Add egg whites, 1/2 cup sugar, Macadamia nuts and rum flavoring and fold into chilled custard mixture.

    Turn into a baked pie shell.

    Chill.

    To serve, top with whipped cream sprinkled with chopped Macadamia nuts.
