Cocoa Black Bean Soup

Ingredients

  • 1 lb. dried black beans
  • 10 c. water
  • 1 tsp. salt
  • 1 large green bell pepper, cored and halved
  • 2/3 c. peanut/salad oil
  • 1 large yellow onion, sliced
  • 1 small hot green pepper, halved and seeded
  • 3 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1 1/2 Tbsp. plain cocoa powder
  • 1 bay leaf, crushed
  • 1/4 tsp. whole cumin seed
  • 1 tsp. sugar
  • 2 1/2 Tbsp. red wine vinegar
  • 2 1/2 Tbsp. olive oil

Directions

    Rinse and soak beans overnight in 10 cups water with 1 teaspoon salt and green bell pepper.

    In a large heavy 6 quart pot, bring beans, soaking water and pepper to a boil.

    Simmer until tender, about 45 minutes.

    Remove green pepper pieces and discard.
