- 1 2/3 c. all-purpose flour
- 1 1/2 c. sugar
- 2/3 c. cocoa
- 1/2 c. shortening
- 1 1/2 c. buttermilk
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. vanilla
- 2 eggs
Directions

1Preheat oven to 350°.

2Line 30 medium muffin cups with paper baking cups (or if you prefer a cake, grease and flour a 12-cup Bundt cake pan).

3Beat all ingredients on low speed, scraping bowl constantly, for 30 seconds.

4Beat on high speed, scraping bowl occasionally, for 3 minutes.

5Pour into muffin cups.

6Bake for 20 minutes (40 to 45 minutes for Bundt cake).

7Let cool and then ice with Creamy Cocoa Frosting.
