- 1 cup granulated sugar
- 1/2 cup Butter
- 2 Eggs
- 2 tsp vanilla extract
- 1 3/4 tsp baking powder
- 1 1/2 cup all-purpose flour
- 1/2 cup Coconut milk
- 1/3 cup unsweetened shredded coconut
Directions

1Preheat oven to 350.

2Grease your pan(I used two 8 inch rounds) and dust with flour(or if you're lucky, just use baking spray!)

3Cream together butter and sugar until pale and fluffy.

4Add one egg at a time and mix well.

5Then add vanilla extract.

6In a separate bowl, stir together flour and baking powder

7Add the flour mixture to the egg mixture and combine well.

8Pour in coconut milk and mix until smooth.

9Fold shredded coconut into the batter.

10Bake for 25-30 minutes.
