Spanish Rice

  • 1 c. rice (uncooked)
  • 2 c. water
  • 1 tsp. salt
  • 3 (8 oz.) cans tomato sauce
  • 1/2 tsp. pepper
  • 2 Tbsp. butter or bacon grease
  • 1/4 c. bell pepper
  • 1/4 c. onion

Directions

    Bring to a boil the rice, water and salt.

    Turn heat down to low setting and cover with a lid.

    Simmer 14 minutes.

    Saute bell pepper and onion in butter or bacon grease until onion is tender. Add this to the rice, then add tomato sauce and pepper.

    Mix thoroughly and simmer 10 minutes.
