  • 1 c. coconut milk or 1/2 coconut milk and 1/2 regular milk
  • 3 c. sifted cake flour
  • 3/4 to 1 c. shredded coconut
  • 1 tsp. vanilla
  • 2 c. white sugar
  • 3/4 c. Crisco
  • 2 1/2 tsp. baking powder
  • pinch of salt
  • coconut extract to taste

Directions

    Cream eggs, sugar and Crisco.

    Add milk, baking powder, flour, vanilla and coconut.

    Bake 30 minutes at 350°.
