  • 2 1/4 c. sifted flour
  • 1 1/2 c. sugar
  • 2 1/2 tsp. double acting baking powder
  • 1 tsp. salt
  • 3/4 c. shortening
  • 3/4 c. milk
  • 1 1/2 tsp. vanilla
  • 3 eggs

    Sift first 4 ingredients into a mixing bowl.

    Drop in shortening.

    Add milk and vanilla; beat 300 strokes (2 minutes at low speed, scraping bowl).

    Add eggs and beat 2 minutes on low. Bake at 375° for 25 to 30 minutes.

    Frost and sprinkle with flaked coconut.
