- 1 c. flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 3/4 c. butter, softened
- 1 2/3 c. sugar
- 2 eggs
- 1 1/2 tsp. vanilla flavoring
- 2 1/2 c. uncooked quick oats
- 1 c. flaked coconut
Directions

1Stir together the flour, baking powder, salt and soda; set aside.

2In a large bowl, cream the butter and sugar until light. Beat in eggs one at a time.

3Stir in flour mixture, vanilla and oats, then coconut.

4Like all crisp oatmeal cookies, these spread, so leave plenty of room on baking sheets.

5Drop by teaspoonfuls 3 inches apart on ungreased baking sheets.

6Bake in preheated 375° oven for 10 to 15 minutes or until lightly browned.

7Cool on rack.
