Ingredients

  • 4 cups vegetable broth
  • 14 oz lite coconut milk
  • 1 carrot, diced
  • 1 red onion, thinly sliced
  • 1 tsp garlic paste
  • 2 tsp ginger paste
  • 1 tbsp red chili pepper paste
  • 1 1/2 tbsp lemongrass paste
  • 1 1/2 green curry paste
  • 1 1/2 tbsp lime juice
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 2 tomatoes, chopped
  • 1/2 lbs fresh spinach

    Add everything except spinach and tomatoes to stock pot.

    Bring to boil and simmer for 20 minutes.

    Add tomatoes and simmer 5 minutes.

    Serve over a small bunch of fresh spinach.
