- 1/2 cup Desiccated coconut
- 1 1/2 cup Self raising flour
- 6 oz Butter
- 1/3 cup Brown sugar
- 3 Eggs
- 1/4 cup Milk
- 1/2 cup Palm sugar syrup
Directions

1Cream the butter and brown sugar until light and creamy.

2Then add the eggs one at a time and mix well.

3Once all the eggs are well mixed into butter mixture, fold in the palm sugar syrup, flour and desiccated coconut into the mixture.

4Pour the mixture into a loaf tin ( 9 in by 4 in by 3 in) that is lined with parchment paper.

5Baked for 1hr 10 mins at 320 Fahrenheit.
