Coconut-Macadamia Nut Cakes

  • 2 sticks butter
  • 3/4 c. white sugar
  • 2 1/2 c. flour
  • 1/2 tsp. salt (omit, if nuts are salted)
  • approximately 1 c. coconut
  • 3/4 c. brown sugar
  • 2 eggs
  • 1 tsp. soda
  • 2 tsp. vanilla
  • 2 Tbsp. water
  • 4 to 6 oz. jar or can Macadamia nuts, cut up in large chunks

Directions

    Blend together butter, sugars and eggs.

    Mix in flour, soda, salt (if used), vanilla and water. Stir in coconut and nuts. Drop by teaspoons onto baking sheet and bake at 350° for 10 to 12 minutes or until lightly browned.
