  • 1/2 c. egg whites
  • 1/4 tsp. salt
  • 1 1/4 c. sugar
  • 1/2 tsp. vanilla
  • 2 1/2 c. moist coconut

Directions

    Beat egg whites and salt until soft peaks form.

    Gradually add sugar; beating until stiff peaks form.

    Fold in vanilla and coconut. Drop by teaspoonfuls, 2 inches apart onto ungreased cookie sheet.

    Bake 20 minutes at 325°.

    Cool slightly; remove from cookie sheet.
