  • 3 c. oats, rolled
  • 3 c. milk (soy or nut)
  • 1 c. coconut (fine)
  • 1 c. cooked cornmeal
  • 1/2 tsp. salt
  • 2 Tbsp. oil
  • 1 Tbsp. honey
  • 1/2 tsp. grated orange rind

    Blend cornmeal with milk and coconut.

    Stir in remaining ingredients with spoon.

    Let sit 1 hour or more in refrigerator. Bake on piping hot ungreased waffle iron until done.
