- 1 cup sugar
- 1 cup all-purpose flour
- 1/4 tsp. baking soda
- 1/8 tsp. salt
- 1 can (11 oz.) Mandarin oranges, drained
- 1 egg
- 1/2 cup packed brown sugar
- 1 Tbsp. butter or margarine
- 2 Tbsp. milk
- 2/3 cup flaked coconut
Directions

1In a mixing bowl, combine the sugar, flour, baking soda and salt.

2Add mandarin oranges and egg;

3beat on medium speed for 2 minutes.

4Pour into a greased 8 inch square baking pan.

5Bake at 350 degrees for 30 - 40 minutes or until a toothpick inserted near the center comes out clean.

6Cool on a wire rack for 15 minutes.
