  • 1 1/2 c. sugar
  • 1 Tbsp. cornmeal
  • 1/4 c. buttermilk
  • 2 eggs
  • 1 stick margarine
  • 1 can coconut
  • 1 frozen pie crust

Directions

    Mix cornmeal and sugar in large bowl.

    Add milk, eggs and margarine, chopped into pieces.

    Add coconut last.

    Pour into shell.

    Bake at 325° for about 45 minutes, or until golden brown and knife stuck in middle of pie comes out clean.
