- 1/2 c. sugar
- 5 Tbsp. flour
- 1/4 tsp. salt
- 2 c. milk
- 3 egg yolks, slightly beaten
- 1 1/2 c. coconut
- 2 tsp. vanilla
- 1 Tbsp. margarine
- 1 baked pie shell
- 4 to 6 Tbsp. sugar
- 2 or 3 egg whites
Directions

1Combine 1/4 cup sugar, margarine, flour and salt.

2Add milk gradually, stirring until smooth.

3Cook over rapidly boiling water 10 minutes, stirring constantly.

4Mix small amount of mixture with egg yolks.

5Return to double boiler and cook 2 minutes longer. Remove from heat.

6Add 1 cup coconut and vanilla.

7Cool.

8Turn into pie shell.

9Whip egg whites until stiff, adding sugar.

10Spread over coconut mixture.

11Cook 15 minutes or until brown.
