  • 2 tsp. cornstarch
  • 2 c. milk
  • 1 c. coconut
  • 3 egg yolks (reserve whites for meringue)
  • 1/2 tsp. vanilla
  • 1 tsp. vanilla (for meringue)
  • 1/3 c. sugar (for meringue)

Directions

    Mix 1 1/2 cups sugar and cornstarch.

    Add milk, 1/2 teaspoon vanilla and eggs.

    Cook on low heat until thick.

    Add coconut and mix well.

    Pour into baked pie shells.
