  • 1 c. sugar
  • 3 1/2 Tbsp. cornstarch
  • 3 egg yolks (save whites)
  • 1 tsp. butter
  • 2 c. milk
  • 1 tsp. vanilla
  • 1 to 1 1/2 c. shredded coconut
  • baked pie shell (9-inch)

Directions

    Mix sugar and cornstarch; add eggs and milk.

    Boil until thick over medium heat, stirring frequently.

    Remove from heat; stir in butter, vanilla and coconut.

    Pour into baked 9-inch pie shell. Cover with meringue (recipe follows).

    Bake for approximately 10 minutes at 350° until meringue is golden brown.
