- 1 c. sugar
- 3 1/2 Tbsp. cornstarch
- 3 egg yolks (save whites)
- 1 tsp. butter
- 2 c. milk
- 1 tsp. vanilla
- 1 to 1 1/2 c. shredded coconut
- baked pie shell (9-inch)
Directions

1Mix sugar and cornstarch; add eggs and milk.

2Boil until thick over medium heat, stirring frequently.

3Remove from heat; stir in butter, vanilla and coconut.

4Pour into baked 9-inch pie shell. Cover with meringue (recipe follows).

5Bake for approximately 10 minutes at 350° until meringue is golden brown.
