  • 3 Tbsp. sugar
  • 1/4 tsp. salt
  • 2 egg yolks, beaten
  • 1 1/2 tsp. vanilla
  • 1 Tbsp. butter
  • 6 Tbsp. flour
  • 2 c. milk
  • 1 pkg. coconut
  • 9-inch baked pie shell

    Combine sugar, flour and salt in a double boiler.

    Add milk and egg yolks.

    Stir until smooth.

    Add 1 cup coconut; cook until thick.

    Remove from heat and add vanilla and butter.

    Cover with meringue.

    Bake 15 minutes at 300°.
