  • 1/2 c. sugar
  • 1/2 tsp. salt
  • 2 c. milk
  • 1 tsp. vanilla
  • 5 Tbsp. flour
  • 2 egg yolks
  • 1 Tbsp. butter
  • 1/4 tsp. lemon extract
  • 1/2 c. coconut

Directions

    Blend the sugar with flour and salt.

    Add egg yolks and milk. Mix well. Add other ingredients.

    Cook until thick and creamy. Cool.

    Pour into baked pie shell.

    Top with meringue made with 2 egg whites, 4 tablespoons white sugar and 1/4 teaspoon of cream of tartar. Bake at 350° until brown.
