- 6 eggs
- 1 fresh coconut, grated, or 1 (8 oz.) pkg. (use about 2 c. fresh)
- 2 Tbsp. butter
- 1/4 tsp. salt
- 1/2 tsp. nutmeg
- 2 c. sugar
- 3 Tbsp. flour
- 2 unbaked pie crusts (9-inch)
Directions

1Cream the eggs, sugar, flour and butter.

2Add salt, nutmeg and milk.

3Stir in 1 cup coconut.

4Pour into unbaked pie crusts (makes 2 pies).

5Sprinkle remainder of coconut on top.

6(Most will sink down, but some will stay at top and get golden brown.)

7Bake for 40 minutes at 375°.
