- 5 eggs
- 2 c. whole milk
- 2 1/2 Tbsp. flour (self-rising)
- 2 deep-dish pie crusts
- 2 c. sugar
- 1/4 tsp. salt
- 1 stick butter or margarine
- 6 oz. pkg. frozen coconut
- 1 tsp. vanilla
Directions

1Mix sugar, salt and flour together.

2Add beaten eggs, milk, vanilla and coconut.

3Melt butter and add to mixture.

4Stir.

5(Can refrigerate at this point.)

6Pour into unbaked pie shells 2 deep-dish pie crusts.

7Bake at 400° for 10 minutes.

8Reduce heat to 300°.

9Cook until golden brown and set.

10Let cool.

11Makes 2 pies.
